Busy in the kitchen
I had some goals when I retired. One of them was to eat healthier. That was why I planted a garden and became a chicken farmer. I was going to live off the land more than I ever had before. This way I could eat fresher food and reduce my impact on the environment at the same time.
Having the fresh food doesn't do any good unless I actually cook it and eat it. So I have signed up for a couple of food blogs. It took me awhile to find these. They had to use vegetables, encourage healthy cooking and the recipes could not be complicated. Both the 'Cookin' Canuck' and the 'SkinnyTaste' blogs meet these criteria although sometimes I have to scramble to find the ingredients in their recipes. They obviously like in the big city.
According to one of the blog writers a healthier way to eat Chinese food is to make them with zucchini noodles or 'zoodles'. You turn zucchini into long thin noodles using a spiralizer. So I bought a spiralizer with the Amazon gift card Mike's mom gave me for Christmas. It is a lot of fun to crank the handle and make zoodles and I am so impressed with myself when I eat Kung Pao chicken that is only 300 calories.

For those of you who know Mike and I really well, you are probably wondering if Mike (Mr. Meat and Potatoes) is actually eating these zoodles. The answer is, of course, no. Here is how we spent the Amazon gift certificate Mike's mom gave him for Christmas.
