Too many potatoes...
at least for one person. Mike and I emptied my potato bag on September 6.
I do not know how many potatoes there were but they filled up a bucket. So far I have made three recipes of Asparagus New Potato Hash. This recipe is from Southern Living and it is very good. Good thing the potatoes are 'free' because the asparagus is expensive right now. That used up three pounds of red potatoes (one pound per recipe).
Then I made Ina Garten's roasted red potatoes using the oven (three pounds), then slow cooker cheesy bacon ranch potatoes which I found on Pinterest (another three pounds). In the meantime the author of the Cookin Canuck blog published a Vegan Potato Soup recipe with Beans and Kale. Making that used another one and a half pounds of fresh homegrown potatoes.
Here is the status of my potato hoard.
