Eggs

The duck eggs are taking over the refrigerator due to the fact that both of my ducks each lay an egg daily.  I have gotten to the point where I am scouring the Internet for recipes that use lots of eggs.  I started out with a recipe for healthy avocado and salmon sandwiches.  It used 3 eggs and lasted me for a few days.  Unfortunately I ran out of smoked salmon.  I am dependent on Emily bringing me some from Carbondale and she hasn't been here awhile.

So then I decided to make quiche.  In one week, I had three quiches but I had to eat them myself because 'real men don't eat quiche.'  I couldn't bring myself to eat another quiche so I started making cookie dough and freezing it but now I am running out of freezer space.  Then I found the angel food cake recipe.

I made the cake today.  Mike, Frank, and Lois loved it but I think I have to try it again because it didn't rise as well as it should.  That is actually a good thing.  Angel food cake uses 10 duck eggs.

Now I have a new problem.  Winifred, one of the hens, is laying eggs again.  So far she has laid one egg three days in a row.  That is a 50% increase in egg production.  I wonder if I need that many more recipes.  And, oh by the way,  look what they are selling in Rural King right now.  

Mike wants some.
